Challenge Week 1 Day 1

So, I did not get a chance to go grocery shopping for my challenge for two reasons. My fridge needed to be defrosted and I could not locate the Mesa Farmers Market. Here, in Arizona they have many little Farmers Markets that can be hard to locate. Saturday morning I will head out to the Phoenix Farmers Market for the first time. I'm still making out my list and will post it soon.

I had frozen fruit in my fridge I will be using for smoothies and shakes. For the next couple of days my meals will be made from whatever I have left in my fridge. 


Thursday’s Meals:
Breakfast: Strawberry Banana Shake
Strawberry Banana Shake:
1 cup Berries
1/2 Banana
½ cup Quick Cashew Milk (2 Tbsp soaked cashews blended with water)
½ cup ice


Snack 1: Trail Mix
Trail Mix:
½-1 oz of Almonds
1-2 Tbsp dried cranberries

Lunch and Dinner: Salad and Easy Dressing
Eats like a Meal Salad:
2 cups chopped kale
1 cup chopped mustard greens
¼ cup chopped mint and basil
1 small tomato
½ cucumber
slices of red onion

Easy Dressing
1 avocado
Juice of 1 lemon
2 cloves garlic
salt to taste
I used a half of the dressing. 

Snack 2: Protein Shake
Raspberry Protein Shake:
6 oz raspberries
½ Banana
1 Medjool Date
1 Tbsp Hemp Seeds
1 tsp Bee Pollen
1 Tbsp Hemp Protein Powder
1 tsp Chia Seeds
Handful of sprouts

Last Dessert/Snack: Cantaloupe


My preparation for Friday included soaking almonds and sesame seeds for Sesame Almond Milk. I also soaked about 4 cups of buckwheat groats to be sprouted for granola that I will make Saturday.
